Beans from the high slopes of Yirgacheffe and the volcanic soils of Guatemala. Harvested by hand, dried on raised beds, shipped in parchment.
Single-origin lots selected each season for clarity and depth.
Water at 94 °C. 15 g coffee to 250 g water. Three pours. No agitation beyond the bloom.
The cup should taste of chocolate, stone fruit, and a long, clean finish. Anything less is not worth the morning.
